Hot Cocoa Oatmeal Bake

Cozy up to this festive granola bake that’ll take you well into the holidays. The comforting flavors of hot oats, cocoa, and cinnamon’s added warmth make this breakfast extremely satisfying. A recipe that comes together so quickly, this Hot Cocoa Oatmeal Bake is undoubtedly a dish to be enjoyed all winter long.

Prep Work for a Hot Cocoa Oatmeal Bake

• For this recipe collect items like mixing bowls, whisk, spatula and an oven safe pan.
• In lieu of a whisk and spatula you could also use a stand mixer with the paddle attachment.

Ingredients needed for a hot cocoa oatmeal bake

• 3 cups whole rolled oats
• 1 1/2 cup milk
• 1/2 cup almond butter
• 1/2 cup maple syrup
• 1/2 cup semi-sweet chocolate chips
• 3 tbsp cocoa powder
• 2 tsp vanilla extract
• 1 tsp cinnamon
• 1 tsp baking powder
• whipped cream (optional)
• candy cane dust (optional)

How to make a hot cocoa oatmeal bake

1. Preheat oven to 350F.
2. In a mixing bowl combine all wet ingredients, including the cocoa powder and cinnamon.
3. In a separate bowl combine dry ingredients (oats and baking powder).
4. Add your wet ingredient mixture to the dry ingredient bowl. Mix until well combined, then fold in chocolate chips.
5. Pour into a greased oven safe pan. I use my 10in cast iron pan.
6. Bake for 30-35 minutes. Allow to cool in the pan for 10-15 minutes.
7. Serve with your favorite hot cocoa toppings like whipped crem and candy cane dust.

Notes and Modifications

While this dish is made to not be overly sweet you may increase the sweetness with ingredients like brown sugar in the batter or an additional maple syrup drizzle once served. I love this dish as is but it’s also wonderful served with seasonal fresh fruit or whipped cream.
